This is an everyday-life tortilleria in Tulum, the place where women and men, adults and kids come every day from 6am to 6pm for their main staple diet, the tortilla. Mexico leads the food consumption of maize with 140kgs consumed per capita every year, followed by South Africa "cradle of the civilization" with 90kgs. Globally, main producers of maize are: USA with 383M tons, China 273M tons, Brasil 100M tons; Mexico 27M tons in average. The machine in the video was patented by mexican Don Fausto Celorio around 1950's, and can produce between 3k to 10k tortillas, or around 131kgs per hour. One kilo of tortillas costs nowadays 28 MXN pesos in Tulum downtown. Maize (Zea mays, and this from Taino "Mahiz", to preserve life) is the result of long time domestication of the Teosinte (Zea perennis). In the Yagul and Mitla caves in Oaxaca -a collection of 147 caves- the earliest evidences of seeds cultivation in the continent were found. Bottle gourds, beans, curcubitaceae seeds and maize cobs dating back to 10,000 years ago, besides 12,000 years-old cave paintings. In recent years, the Ramón or Mayan nut tree, Óox in Yucatec Mayan, is a native tree that has been studied as an alternative to corn, a remedy against upcoming famines, and is becoming more popular.
